Chicken Salad Recipe
1 teaspoon vegetable oil 1/3 cup + 2 tablespoons mayonnaise 2 1/2 teaspoons lime juice 2 large cloves garlic, chopped finely 1 3/4 teaspoons grated, fresh ginger or 1/2 teaspoon powdered ginger 2 teaspoon salt 3 cups cooked, cubed chicken 6 green onions, sliced 2 stalks celery, sliced 1 small carrot, quartered and sliced thinly 1 medium zucchini, quartered and sliced thinly 2 tablespoons chopped, fresh parsley Sauté almonds in oil until golden; reserve. In large bowl,
combine mayonnaise, lime juice, garlic, ginger, and salt. Add chicken,
green onions, celery, carrots, and zucchini. Fold in parsley and
almonds.
